Tamarind Curried Coo

This is a recipe of my own and is a real stonker. If you are a meat lover then this is really something to get your teeth into. Great big hunks of beef marinated in chillies, tamarind, garlic and other lovelies then cooked with onions and spices. It is a fairly dry curry and as such does not need my basic curry sauce to go with it. I cannot recommend this highly enough, it’s my fav recipe!

Serves 2/3 people

OK Ingredients time.

1 pound Brisket Beef, chopped into LARGE chunks.

Marinade
4 red chillies, diced fine with seeds
4 large cloves of garlic diced fine
1 inch piece of ginger diced fine
Tablespoon of runny tamarind or 3 inch block soaked and prepared
2 teaspoons of Worcester sauce
1 teaspoon of ground coriander seeds
2 teaspoons of ground cumin seeds
3 ground cardamom
2 ground cloves
1 large bayleaf, ground
2 teaspoons white vinegar
Half a cup of olive oil

Sauce
2 large onions chopped finely
3 tomatoes diced
5 large garlic cloves crushed
1 inch piece of ginger crushed
1 tablespoon of tomato puree
1 tablespoon of cumin seeds
3 cardamom pods crushed
3 cloves crushed
Half a teaspoon garam masala
4 tablespoon of olive oil
2 cups of water

Marinade Preparation

Combine the marinade ingredients in a large bowl with the beef and mix thoroughly, leave somewhere cool for 6 hours or put in fridge overnight. Stir now and again.

Once beef is marinaded.

Heat oil in a large pan, add diced onion, garlic and ginger, fry for 8 minutes.
Add all ground spices except the garm masala and fry for 1 minute
Add beef and marinade and fry over high heat for 3 minutes stirring all the time, if it sticks add more oil.
Add tomatoes and tomato puree
Add water
Stir all well and simmer uncovered until the sauce is very thick and oil is floating.
Add garam masala and stir
Season to taste with salt
Serve and enjoy with naan bread and rice
