Perfect spiced rice
Take 2 cups of rice and wash it until the water runs clear. This removes the starch and saves it from getting all sticky. Add the rice to a large saucepan of cold water and into this add 5 cardamom pods, 5 cloves, 3 bayleafs, a teaspoon of salt and a tablespoon of cumin seeds. Leave to soak for 30 minutes. Once soaked, bring to the boil rapidly then turn down to medium and leave it to bubble for 8 minutes. Check with a fork to see that it is just done. Drain and leave for 5 minutes then fluff up with a fork. You should have perfectly separated and well spiced rice |
