Making the most of your chicken
Most people roast a chicken, eat the breast and legs and then throw away the carcass, which is a terrible waste. A chicken can easily feed a family of 4, 3 times over if done properly. First dish, roast chicken. Second dish - remove chicken from the underneath of the carcass and around the body, make a lovely risotto or an omelette. Third dish - boil up the carcass and make a tasty and hearty chicken broth. We live in a world of waste now and never properly utilise what we have in front of us, instead we prefer just to throw everything away. Remember, that chicken was alive and we should be greatfull to it for having fed us. One way of showing that it to make the best use of it. Also - always buy free range chickens. The poor chickens that are barn raised live in terrible conditions and we should not be helping support that by buying barn raised. Go to your local butcher and they will give you a free range chicken every time. |
